Can anyone refer me to a good software to assemble a gameplay flowchart?

Try search on the internet "mind map", there are a lot.

I personally use "Scapple", has a 30 days free trial and cost 15 dollars the full version, both Win and Mac. It's simple so you can't distract with thousand of useless function...

I use Google Draw, which is part of Google Drive's suite of tools.

It's free and cloud-based and free.

I prefer the Cmap Tools http://cmap.ihmc.us which is free for commercial use too. It is a perfect tool for constructing game flow I think. One thing that I realised very late: You have to press SHIFT in order to draw a line without this sort of text in the middle between two nodes.
