I need my player to collect 6 items, and to craft them into 1 new inventory item. I've looked at the Crafting Menu in the Menu action list, but can't work out how to structure it. As well as crafting the recipe when the 6 items are in the inventory, can I specify a location where the crafting has to take place, or does it occur as soon as the 6th item is added to the inventory?

You can choose whether the resulting item is created automatically or not - just check Result is automatic? in the Recipe's properties box.
If unchecked, the player will need to invoke an Inventory: Crafting Action with its Method set to Create Recipe - though this is provided by the default Crafting Menu via the "Create" button.
