I've been unable to find any other discussions regarding this. I'm trying to use an AC Pickup object for this minigame I've created. It works perfectly with the mouse. Can this be made to work with a controller as well? (Maybe something like hold down a button on the controller while moving the joystick up/down to simulate mouse dragging?)

All input is based on Unity's Input Manager, so I don't see why not - what's your Input method set to?
An object can be "grabbed" when the InteractionA input is held down - that can be a mouse click or a controller button.
The drag vector, however, is based on the delta cursor position. If you're using Keyboard Or Controller input, then the cursor is driven by anyway CursorHorizontal / CursorVertical inputs.
