Interesting problem I've come across. I made a mirror using this method for my 2.5d game.
However, I'm having trouble assigning it a background so characters reflections aren't just standing in the void.
My guess would be that you'd need to have the reflected background placed physically in the scene as a Material on a Quad or Plane. Have it facing the mirror (and so away from the camera), and it shouldn't then be visible to the regular MainCamera - only the reflection.
