I have a project where you control 2 characters (not simultaneously) and both have their unique inventories.
The thing is I don't know how to do that part. Having 1 inventory manager, and 1 menu but different objects depending on which character is currently played.
I've seen about categories but I don't exactly understand how to use them.

If you make use of AC's Player-switching feature in the Settings Manager, then each Player will - by default - have their own set Inventory items, handled automatically. Just set the Player switching field to Allow, assign your Player prefabs, and make sure All Players share same Inventory? is uncheceked.
